Ground cumin brings an earthy, slightly bitter flavor to some of our favorite blended seasonings — from curry powders to Za'atar and Ras el Hanout. It is one of the most consumed spices in the world, right after chiles and black pepper.
Ground sumac is known for its tart, astringent flavor and is used most often in Middle Eastern cuisines. It goes well with many meat dishes including chicken, beef, lamb, and fish and is a key ingredient in the Middle Eastern spice blend Za’atar.
