About Chinese Five Spice
This blend of five powerful spices is used extensively in Chinese and Taiwanese cooking. Our Chinese five spice powder is a pretty classic combination of star anise, cloves, fennel, cinnamon, and Sichuan peppercorns; other versions may also include ginger, nutmeg, or orange peel. The flavor profile is sweet with hints of licorice, clove, cinnamon and just a bit of heat. Five spice powder is highly aromatic and should be used in relatively small quantities — a little goes a long way.
Chinese five spice is designed to adhere to the “Five Elements” theory of Chinese cooking — sour, bitter, sweet, spicy, and salty. Like finding the balance between yin and yang, this desire to balance the five elements of taste is often seen in Chinese cuisine.
With its powerful and complex flavor profile, Chinese five spice pairs well with fatty meats and slow-cooking stews. It can also be used as a spice rub for chicken, duck, pork, and fatty cuts of beef. Use it in your beef stews and roasted duck recipes. For an interesting twist, substitute it for the cinnamon or cloves in baking recipes. Chinese five spice powder can also be a great addition to marinades for chicken and fish as well as fried rice and stir fry dishes.
