French cooking is all about bringing out the best qualities of your main ingredient. French onion soup is an ode to onions while coq au vin is a celebration of chicken. French cooks use the other ingredients — garlic, onions, olive oil, butter, tomatoes, red wine, herbs (both fresh and dried) and spices — to create layers of flavor that complement the main ingredient.

Popular french herbs include rosemary, thyme, marjoram, and oregano. The herb blend, Herbes de Provence, often features lavender. You’ll see tarragon called for in French mustard recipes. And then there are French classics like beouf bourguignon and bouillabaisse. Beouf bourguignon (also called beef bourguignon or beef Burgundy) is a red wine based beef stew that combines braised beef, vegetables, and a bouquet garni (an herb bouquet) that may consist of French herbs such as parsley, thyme, and bay leaf.

Bouillabaisse is a fish stew born out of Marseille in Southern France that uses whatever fish is fresh and available that day.
