These spiced chocolate pistachio cookies give a fun twist to traditional chocolate chip cookie recipes. With a denser dough, a touch of cinnamon and clove, and the salty crunch of pistachio — these cookies are sweet, savory, and oh-so-addicting. Make them anytime you’re craving something unique and flavorful.
Makes: 18-20 cookies

1.5 sticks unsalted butter (softened)
¾ cup dark brown sugar (packed)
⅓ cup granulated sugar
½ tsp Ground Cinnamon
¼ tsp Ground Clove
1 egg yolk
1 cup all-purpose flour
1.5 tsp baking powder
⅛ tsp salt
5oz mini chocolate chips
1 cup pistachios, shells removed and roughly chopped
Optional: Large Flake Sea Salt as a topping
Preheat oven to 350°F.
In a medium mixing bowl, combine the flour, baking powder, and salt and whisk or stir to combine. Set aside.
In a large electric mixer, cream the butter using your flat beater attachment. Add sugars and spices and mix well. Next, add the eggs one at a time and continue mixing.
Now add the flour mixture. You may have to pause a few times to scrape the sides of the bowl or the beater. This batter will be less creamy than a traditional chocolate chip cookie dough, so don’t be alarmed if it seems a bit gritty. That’s ok. Just make sure all of the ingredients are well blended.
Now add the chocolate chips and most of your pistachios (leave a few for topping). Mix in by hand with a spoon or spatula.
Scoop rounded tablespoons of dough onto cookie sheets, spaced a few inches apart. Top with a few extra pistachios and optional flake salt.
Bake each batch of spiced chocolate pistachio cookies for 12-15 minutes. Allow the cookies to cool on a baking rack for a few minutes before serving. Enjoy!
