Dried Chili Mango Snack

If you love a spicy-sweet snack as much as we do, you’re going to appreciate this diy version of spicy dried mango. You’ll need a food dehydrator — which is actually super handy for making all kinds of healthy homemade treats like jerky, potato chips, crackers, dried fruits, and more. We use the NESCO Snackmaster Pro Food Dehydrator to make this dried chili mango snack.

BASICS:

Prep: 15 minutes
Cook: 20 hours in the dehydrator

INGREDIENTS:

3 mangoes
2 cups water
2 cups sugar + 1 T sugar
1 tsp Spanish Smoked Paprika
1 tsp fine salt
¼ tsp Cayenne Powder

INSTRUCTIONS:

Slice mangoes into pieces that are about 1-inch wide and ½-inch thick. Keep in mind they will shrink and become much thinner as they dehydrate, so don’t be afraid to cut them thick.

Arrange the spiced mango slices on the trays of the dehydrator, making sure they’re spaced enough apart for air to get through. Cover and turn the dehydrator on to the “dried fruit” setting (135°F). Let it run for about 16 hours.

Mix paprika, salt, cayenne and 1 T of sugar in a small bowl, set aside.

Bring water and 2 cups of sugar to a boil in a medium pot. Add the dried mango and lower heat to simmer for 10 minutes uncovered.

Remove the mango from the pot and arrange on a baking sheet. Sprinkle the paprika mixture evenly across the dried mango slices, flip to coat both sides.

Put the mango slices back into the dehydrator for a few hours (3-4 hours or until dry). Store in a jar or plastic bag.
